Mixed Mushrooms with Ginger

oyster sauce 1 tablespoon
soy sauce 1 tablespoon
mirin 1 tablespoon
chopped ginger 2 teaspoons
freshly cracked black pepper
picked cilantro leaves 1 tablespoon

  1. Preheat your Nomiku water bath to 85ºC (185ºF).
  2. Combine the cut mushrooms, oyster sauce, soy sauce, mirin, ginger, and black pepper to taste in a 1-gallon freezer-safe zip bag. Toss to distribute the ingredients, and seal using the water displacement method (using pie weights to submerge the bag if necessary).
  3. Lower the bagged mushrooms into the water bath and cook for 10 minutes.
  4. Remove the bag from the Nomiku bath and transfer the mushrooms, liquid and all, into a serving bowl, before garnishing with the cilantro leaves.
